I love good food. I always said that I'd rather have good food than bad food any day of the week. Since living at home, I have dwellled on the delicious cooking of my mother. I haven't had to worry about cooking since I've been at home. But my mom was recently out of the country and unable to cook for me. It was time to turn to my college rations and mindset. I can occasionally get a little over-creative with my meals. I admit
that about half of the time it turns out a bit less than desirable, but
once in a while, I discover something amazing. I stumbled upon this
little invention just this evening on accident. It is super easy and I
am quite excited to try it at school in a few weeks when I go back. Here
are the steps (It doesn't get much easier than this right here.)

Cut up a Green Bell Pepper like so |

Add a dollop of cottage cheese |
 |
Put on a few slices of grilled chicken |
 |
Add a bit of salsa and the concoction is complete. Crazy, but quite satisfying. Warm up the pepper and the chicken first, but then you can just eat them like finger food. Yummy! Does that Look like a college meal or what :) |
